One of my favourite things to make is Vegetable soup. You can throw in whatever you have in the kitchen and it is delicious and healthy!! I like to cook it in the slow cooker on busy days to make sure we eat healthy by the time we sit down for dinner.
Bellow I have included the list of ingredients I used for our most recent Vegetable Soup
- 1 tbsp olive oil
- 1/2 onion chopped
- 3 cloves of garlic
- 2 medium carrots
- 1 celery rib
- 1 container of vegetable broth
- 1 can of white beans
- 1 zucchini
- 2 cups of halved cherry tomatoes
- 1 bell pepper, chopped
- 1 tbsp green chiles
- salt
- pepper
- 1 tbsp Parsley
- 1 tbsp Basil
- Sprinkle of red pepper flakes
The beauty of the slow cooker is you are able to throw everything into it at once and let simmer for 6-8 hours … therefore perfect for busy days!
